Inspired by Greg's new vegetarian turn and ample veggie-rice strata lunches, I decided that I really had to get serious about beans as a source of fiber and protein. Lentils are my favorite such legume, so I decided to start there. I also happened to have a bag of plain green lentils in my cupboard looking dry and forlorn. Instead of doing a basic lentil soup I wanted to use Indian spices, so I trolled around online and ended up mixing and matching some recipes for lentil curry and daal, using whatever spices and sauces I had around the house at the time.
