Easy Thanksgiving Recipes – Candied Sweet Potatoes

In my opinion, the best Thanksgiving recipes are easy, and they tolerate being made a day or two ahead of time with no loss of flavor or texture.
This is one of those recipes.
Depending on how things are going with cleaning (and how much room there is in my refrigerator), I will either pre-cut the sweet potatoes the night before or cook the whole dish the night before. It reheats beautifully, so it really doesn’t make any difference to the finished dish.
I like sweets. A lot. And so, I use a bag (or two!) of mini marshmallows on top of these potatoes. They make the finished potatoes exceptionally sweet. If

These potatoes are delicious and rich.
They’re definitely not the kind of mashed potatoes that you’d make and eat every week.
You could make them every week, though, because they are very easy to prepare.
But then, you’d probably gain ten pounds between now and Easter.

Grace and I have had the flu for the last week. We haven’t done any fun cooking, nor any fun eating.

When I picked Grace up from daycare last Friday, I told her a secret.
“Grace! Hurry up and get your things. We’re going to see something very special tonight.”

Sometimes, it doesn’t take much to get Grace excited. She’s a lot like someone else I know.
I didn’t tell her exactly what the something special was until we were home. She had no idea what I was talking about, so I showed her a preview online. She told everyone she talked to from then on:
