Re-Creation Begins
You all know how much I love (and rely) on my leftovers.
Thanksgiving is the holiday for me. Our fridge is stuffed with tupperware filled with goodies to be enjoyed over the next week.
This morning (at 10am!! Eeks!), I started us off with a frittata.
I sautéed red bell pepper and mushrooms leftover from yesterdays veggie tray and added some diced asparagus.

First and foremost, HAPPY THANKSGIVING! I am really thankful for the opportunity to spend the day in the wonderful presence of my family, great food, a warm home, and now, a very full belly!
This morning, we started the morning off with a bowl of pumpkin oats.

The Late Late Show
If last night was “The Late Show” then tonight is “The Late Late Show”! It’s after 10pm already! I’m such an old lady. I am exhausted and ready to just fall into bed. Jodus is already cozy in the sheets! Jealous!
I started off the day quite early and not at all bright. We tag teamed the oatmeal effort. In the mix is 1 scant cup of oats, 2 cups vanilla soymilk, some chopped dates and walnuts, a banana, and topped with shredded coconut (unsweetened).

It’s been a busy and long day for me! That’s becoming the usual!
I started off with reheating leftover veggies scramble from this weekend, topped with hot sauce!
