Giving Thanks
Hello Folks!How have you been? Did you have a great thanksgiving? I surely did!We've been out straight for the past week getting ready for company and our thanksgiving dinner. David's parents arrived Tuesday night, and Wednesday was a baking, prepping marathon! Thank goodness for all the extra hands in the kitchen!After looking at the turkey, I realized it was too big to spatchcock like I had wanted to. I did not have a sheet tray big enough to cook it on, so I guess I'll be saving the spatchcocking for chickens instead!My dad mentioned slow roasting the turkey over night. Well, Sunday isn't much of a day of rest here! There's been laundry, bread baking, telling the dog to stop barking and refereeing for two six year old girls that bicker like they are the oldest of old ladies!In an effort to keep things simple and easy so I can accomplish something today, I threw together the quintessential one pot meal. I'm practicing my spatchcocking technique for Thanksgiving on this little chicken. Add some onions, carrots, green beans, olive oil, salt and pepper. Throw it all on a rimmed baking sheet and put it in the oven to cook.
