Recipe for Qunioa with Mixed Vegetables
It was only a few months ago that I had NO idea what Quinoa was. Can you believe that? I know - I should be punished for my lack of knowledge when it comes to Quinoa. You see I have always been a pasta girl... never a big fan of rice or any other grains.BUT... that has all changed. I have become a Quinoa fanatic. I can't get enough. It is so delicious and it goes great with just about anything.
Recipe for Irish Nachos
I am fairly confident that you all know my obsession with guacamole by this point in time. I could and would eat it everyday for every meal and I am certain that I would never tire of this. I am always on the lookout for new ideas that involved my beloved guacamole and this past week my boyfriend brought these Irish Nachos to my attention.They are pretty much like regular nachos but so much better because instead of using chips, you use thin slices of potatoes and then pile on the other ingredients. They are down right delicious and a total crowd pleaser... not to mention extremely budget friendly.

I have a hard time adjusting to fall. I love summer and all of the things that come with it... sundresses, the beach, vacation time and really fantastic fresh fruit and vegetables at the farmers market. I get a little bit sad when I start seeing squash and pumpkins popping up all over the place because it means summer is gone... and then 10 seconds later I am over it because this means its time to start developing recipes for the fall! I can't wait to start making decadent desserts and slow roasted meats over a bed of polenta and other really delicious comfort foods :)This Spinach and Pomegranate Salad is a perfect transition salad that is light but comforting at the same time.
Recipe for Gluten Free Blueberry Raspberry Oat Muffins
Gluten, Wheat free, and Vegan muffins are foods that I see popping up all over the place! I am constantly on the lookout for products like these because I have a fabulous friend who has a gluten intolerance and because I just feel better when I eat less gluten! Recently I tried to reinvent a recipe from one of my friends for Blueberry Oat Muffins. I made a few tweaks here and there and added a handful of raspberries to add some extra flavor!A year or so ago I would have been too scared to try and make a gluten free recipe, but with fabulous natural food stores, I have been able to find some of the ingredients I was once scared to use!
