OK, OK...I have great excuses for not having updated in a few weeks. The class ended up not starting officially until last week, last Tuesday night. I went to class that night and was feeling off, had a dry, scratchy throat, dull headache that had dragged on all afternoon and evening...and my whole night was just off!I had baked the 2 round cake layers the night before, poundcake, my favorite. Who wants cake?
Confection Perfection…not because I am setting any standards, but because I will spend hours getting the details just so…or the cake goes in the trash. I will not serve an ugly cake. Tonight begins Cake Decorating 101, as I like to call it. I am a pretty decent baker, meaning that I am always learning. (But aren’t we all when it comes to our interests?) I find that I rely on foolproof pound cake recipes, because these yield sturdy, solid cakes – ideal for withstanding lots of icings, heavy fondants or other ornaments.
